This year we chose to expand our praline line by adding to our best selling Peanut Butterflies and Gianduja Blocks.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eFresh nuts are carefully roasted with sugar in a copper pot, a French technique that perfectly roasts and coats each nut in caramel. Once cooled, the nuts are ground into a smooth paste, and chocolate is folded in.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eWhat comes out is not sweet the way a candied nut is sweet. The caramel goes dark and toasty, the roast comes forward instead of hiding behind sugar, and the chocolate holds the whole thing together.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eThis has been one of my favorite techniques for as long as I have been making confections, and I do not think nearly enough people in this country have tasted just how amazing it can be. Part of that is the word itself, which does a lot of work depending on who is holding it.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cem\u003eIf you grew up in the American South, a praline is a soft pecan patty and you probably say PRAH-leen and have opinions about people who say PRAY-leen. In Belgium, a praline is any filled chocolate. What I am talking about is the French one, praliné, and it is not a candy at all. It is a technique.\u003c\/em\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eWe have made four different Praline Crunch Bars to highlight the distinct and wonderful differences between the nuts.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cstrong\u003eHazelnut.\u003c\/strong\u003e Everyone has eaten hazelnut and chocolate out of a jar. This is the same idea done properly, and it is the bar I hand people when they tell me they have no idea what praliné is.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cstrong\u003ePeanut.\u003c\/strong\u003e The least fancy nut in the box and usually the one that surprises people most. Deep roasted, and the praliné turns them into something that tastes very little like the peanut butter cup you are imagining.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cstrong\u003ePecan.\u003c\/strong\u003e If you are picturing the classic New Orleans pecan praline, this is not it. I am a huge fan of those, and I even made them for a famous candy company in New Orleans years ago, but applying the French praline technique to pecans creates something very different and delicious.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cstrong\u003eAlmond.\u003c\/strong\u003e Interestingly, this is the only one of the four with bittersweet chocolate mixed into the praline itself, rather than dark milk.
