Pate de Fruit

Pate de Fruit

The story behind our pate de fruit takes its roots, like many others, with our founder, Chuck Siegel.  It has always been Chuck’s goal to make exceptional chocolate, and sometimes he took inspiration from his childhood favorites. Our milk caramel is a play on Rolos, our peanut butterflies on Reese’s, and in the case of the pate de fruit was inspired by Jujubes and Jelly Bellys.  However, as with so many mass produced classics, they are made with ingredients chosen for their low price and ease of use, not their quality and taste.  But when he ran across some European pate de fruit while traveling through Paris his idea began to take shape.  Upon his return home he toiled in his own kitchen until he was able to come up with the perfect recipe that you find in stores today.  With 45% fruit, and no gelatin, our pate de fruit is almost like eating the fruit itself.  We use all natural ingredients to capture as much of the fruit’s flavor as possible and create the tender texture that makes our pate de fruit so good.

One year after the release of our classic pate de fruit, we developed it’s equally delectable cousin: our wine pate de fruit.  Upon the request of a company in Napa, we set out to find the best wines and turn them into the candies that Charles Chocolates fans had come to love.  Our kitchen was able to play around with the best varietals of wine and combine them with complimentary fruit flavors to create the exceptional wine pate de fruit you find today.  As with everything we do, the core of our philosophy has always been to create the highest quality product and to do so we use the highest quality ingredients.  But the proof is in the pudding, so to speak, so stop on by the store and try for yourself!

Chuck’s Chronicles – July

After a short hiatus due to a flurry of activity surrounding our move to San Francisco, I’m back!  I’ll be sending short emails at the beginning of the month talking about how things are going behind the scenes here at Charles Chocolates.

Of course the biggest news of the last few months can be summed up with “We’re Back.”  Many of you know that I started Charles Chocolates, nearly 6 years ago, in San Francisco.  A year later, we moved to Emeryville where we had the space we needed to grow the business.  A remarkable confluence of events has allowed us to move back to San Francisco and open our new store in the Westfield San Francisco Center (3rd floor under the dome).  If you haven’t stopped in to see us yet, please do.

To spread the word that we’re back in SF, we’ve been keeping busy here with tons of great events.  I “cooked’ in the mint, participated in SF Made’s first fundraiser, schmoozed with the ladies of the SF Symphony and was almost carried away at a Sex and the City 2 launch party.  I’ve had a great time meeting loads of new folks and feeding them many of my favorite chocolates.

To complement all of the changes to our store, we have also been working on refining our new website to make it easier for your to shop online.  Now that summer is here and the cost of shipping by air continues to go up, I am pleased to announce that we have significantly expanded the ground shipping zone – it now includes most of Northern California and Northern Nevada.  We are also going to be offering special deals throughout the summer, so make that you are following us on Twitter and Facebook if you want to be among the first to know about them.

The Tea Collection

Tea Truffles

While tea and chocolate have both been important culinary indulgences throughout the ages, they have typically been savored individually. The combination of tea and chocolates, particularly Asian teas, has never been fully explored in the chocolate world – until now. After months of tea and chocolate selection, pairings and tastings, a special collaboration between Charles Chocolates and Teance Fine Teas has resulted in the creation of The Tea Collection, an exclusive selection of tea-infused chocolates.

“My vision of East meets West is where flavors complement each other in ways that are both sophisticated and novel.” Explained Winnie Yu, Founder, Teance Fine Teas.  ”As a tea aficionado, I was finding that most chocolatiers added teas to flavor chocolates without really understanding how the true taste of tea can be elicited and melded together with the taste of chocolate. Fortunately, Chuck and his team brought their considerable expertise to help me develop the right taste profiles and flavors to create this outstanding Asian tea chocolates line.”

Five different flavors of the freshest, highest grade Asian teas available are each steeped individually in cream to create an infusion. Each infusion is then blended with milk and bittersweet chocolate to create a ganache. Finally, each ganache is coated in Charles Chocolates’ special 65% bittersweet chocolate blend, making for a delicious, complex flavor contrast. This initial collection features Formosa Baochong, Special Jasmine, Osmanthus, Lichee, and Charcoal Fired Oolong, all sourced and selected by Teance.

Perfect Chocolate Truffles!

We know how much you love our truffles but why should we have all the fun?  We’ve created a truffle making kit that you use to make truffles in your very own kitchen!  We’ve even thrown in a few tips on how to add some pizazz to your ganache.

Here’s the basic recipe:
250g (8 oz./2 cups) 65% Bittersweet Chocolate
250g (8 oz./2 cups) 41% Milk Chocolate
345g (1 1/3 liquid cups) Heavy Whipping Cream (not ultrapasteurized)
1 Vanilla Bean
150g (5.5 oz.) Unsalted Butter – softened
453g (16 oz./4 cups) 65% Bittersweet Chocolate for dipping
225g (8 oz./2 cups) Natural (not Dutch processed) cocoa powder for rolling

Frozen Hot Chocolate – A Cool Recipe for Summer

Even though the weather is heating up (unless you’re in San Francisco like us, where it is still chilly at times) you can still enjoy our NEW Signature Hot Chocolate Mix (available for the next 2 weeks with the purchase of one of each Salty-Sweet Bar; online sell date 6/7/10).

This simple recipe for Frozen Hot Chocolate is great as a personal indulgence or whip up a big batch for a crowd!

Charles Chocolates Frozen Hot Chocolate

Yield: 2 Servings

1. Make the Hot Chocolate as directed on the package then cover and chill in the refrigerator.

2. Once the chocolate is completely chilled, pour over 6 oz. ice and process in a blender until smooth.  For an added treat, top with whipped cream and chocolate shavings.

Has my chocolate molded?

Without fail, at least once during each public tour I gave at the previous Charles Chocolate location, I was asked to explain that funny, dusty, white film that sometimes appears on chocolate.  “Is the chocolate still good?” someone would ask with a worried look or, “is it still safe to eat?”. Usually someone would know the correct answer, Fat Bloom, but very few understood what this actually meant.

The basic explanation is, the fat in the chocolate, (the cocoa butter), separates from the dark part of the chocolate, (the cocoa “solids” or “liqueur”). Generally the chocolate is still safe to eat, but because of changes that have occurred within the chemical nature of the chocolate, it will not taste or look as good as it should.

Now an SF Made Member

Charles Chocolates started manufacturing in San Francisco several years ago but chose to move across the bay to Emeryville when a beautiful space opened up on Hollis.  It was always our hope to one day move back to San Francisco, and in February we made that happen by opening our flagship store in the Westfield Centre.  Having come full circle, we were thrilled to discover SF Made, an organization that ” promote[s] San Francisco-based companies that manufacture products within the San Francisco county limits.”

On June 9th we will be exhibiting at their first fundraiser in the Ritual Coffee Roasters warehouse along with many other San Francisco favorites.  Stop by and check it out!

Sex and the City 2

Charles Chocolates sampled a few of our popular truffles for the ladies that attended the Sex and the City 2 event at the Westfield San Francisco Centre this Thursday.

This event was a combination of food, fashion and cosmos as many vendors in the mall came to participate.  All proceeds from this event penefited Art Point, The Young Professionals Organization of the Fine Arts Museums of San Francisco.
